I’m the queen of monotony. I admit it. However, when I’m trying to eat right, it does help me because I just cook the same thing over and over again. I am trying to be more well-rounded at meal times though. Since I’m the only adult home during the day, lunches are easy for me to just throw a sandwich together quickly. Because of my effort to incorporate more fruits and veggies, my lower refrigerator drawers are being stocked better. Hence, today’s lunch:
Chicken Sandwich: Boiled chicken breast (4 oz), 1 oz of sharp cheddar cheese, 1 TBSP ketchup, 3 slices tomato, 1 Orowheat Sandwich Thin.
Raw carrots.
1/2 banana.
According to myfitnesspal app, it was 444 calories. When you are chasing kids all day, that’s a good lean lunch.
It wasn’t terribly adventurous but I managed all of the food groups and an array of colors on the plate. Yes, I understand that it would have had fewer calories had I left off the cheddar cheese. I’m a cheese addict and I won’t sacrifice my cheese. I have cut down tremendously though. See? Progress. Plus, cheese is dairy. 🙂
